broccoli "cheddar omelette"

Equipment:
non-stick or well seasoned Sauté pan
french knife and cutting board
saucepan or microwave for potato
heavy duty spatula

No need to add salt or fat to the middle, it is taken care of by the "cheez"
Ingredients:
*  a handful of Daiya cheddar shreds
*  a couple tablespoons of cooked potato, dry
*  a couple tablespoons of raw, washed, chopped bite size pieces of broccoli

Method...
Heat pan to medium heat for around 1 minute
Place "cheez" in circular pattern on non-stick pan and heat until bubbling and you can slide a spatula around the sides
add potato and broccoli evenly and slide spatula under "cheez" into circle first, then carefully flip onto one side, plate and serve
