A friend turned me onto this site: veganbaking.net. They have an incredible non-palm oil vegan butter recipe derived from refined coconut oil (no coconut taste). The curdling of the vegan milk gives this a very realistic "butter" taste. I did not have the soy lecithin on hand and used a little more xanthan gum and this worked to combine the oil and water. I also used a little less coconut oil and a bit more sunflower oil, and this made the vegan butter spreadable.
