veggie chow mein

This is an easy, throw together dish using either vegan soba noodles or spaghetti noodles.  If using the spaghetti noodles, cook the night before, then place in frig overnight, covered (the dry spaghetti noodles take on the sauce flavor)

Equipment:
Wok or large sauté pan
wooden tossing spoon or tongs
easy, use up frig veggies dish

Ingredients:
8 oz. noodles of choice (see above)
vegetables of choice, shredded or sliced very thin
oil for wok (with minced garlic, onion, ginger)
chinese vegan stir fry sauce to taste
minced cilantro (if you wish)

Method...

  1. add a little oil to extremely hot wok, add veggies that need to cook longer first, then add less cook time veggies, then add noodles.  
  2. Toss a couple of times, add a little bit of stir fry sauce (you do not want this swimming in sauce)
  3. plate the dish and serve right away.
