Posted this recipe because I substituted chives (they grow like weeds, and we should all freeze dry enough for a lifetime) and agave nectar instead of onions and sugar in this cucumber recipe, and it turned out delicious.
Equipment:
Mixing and storage bowl
big spoon for stiring
measuring cup
cutting board
french knife

Ingredients: (makes 2-3 large servings)
1 large cucumber, sliced to your liking
4-5 small fresh, washed tomatoes, sliced to your liking
1/3 cup cider vinegar
to taste, agave nectar (taste to make sure the sweetener cuts the vinegar kick, approx 3 TBL)
1/2 tsp salt
fresh ground black pepper
2 TBL minced chives
Method...
Combine the vinegar and agave in large bowl and mix until well combined, add salt, chives and pepper. Taste to make sure you like the mixture. Add the cucumbers and tomatoes and toss. Cover and refrigerate for at least 24 hours, the more the cucumbers sit in the dressing, the better.
