scrambled polenta brunch

Low fat, gluten free, soy free delicious brunch scramble
Equipment:
Large Sauté pan
Heavy duty spatula
French Knife
Cutting Board


Ingredients...for polenta 2 servings
1/2 package of organic polenta (9 oz.) 3/4 cut into small squares and  1/4 smashed through your hands
a little spray oil or 1 tsp olive oil
as needed, broccoli or asparagus, washed and cut into edible size pieces
1/4 cup minced red onion
1/4 cup minced red bell pepper
2 TBL nutritional yeast
as needed, hot sauce
as needed, either herbamare or kala namak black (hard boiled egg taste) salt 

Method:
Place the cut and smashed polenta into heated sauté pan on top of spray oil or olive oil
Place the vegetables, nutritional yeast on top and keep heating and flipping around until hot
Serve with in season berries, breakfast potatoes, tofu bacon (scroll down, the recipe is at the end of the post on this link)
If you do not want to have soy, you can add a sweet, salty, smokey taste to just about any vegetable or bean you wish, following the same recipe.  This smokey addition adds a wonderful mix of flavors on this plate
