tofu ricotta cheez


Use for lasagna, dips, roll-ups, wraps, etc

Equipment:
Big bowl
Big spoon

Ingredients...
2 packages of 16oz. extra firm tofu
3 TBL olive oil
2 tsps nutritional yeast
2 TBL lemon juice or cider vinegar
1/4 cup fresh, washed, minced italian flat leaf parsley
salt to taste
pepper to taste

Method:
Wash hands and dry
drain tofu out of package and try to get most water out
combine all ingredients in big bowl and mix with hands, taste for salt and pepper
