I posted this recipe because it is easy, and all non-vegan friends love this (Yes, its one of the easiest things to make and gets the best compliments). This spread is the hit of the party!!
Ingredients:
1 container of tofutti vegan cream cheese
1/4 cup olive oil
1-2 tsp. of liquid smoke of your choice (or vegan barbecue sauce or vegan TVP bacos)
1/2 cup re-hydrated dried tomatoes
1/4 cup red onion
1 small clove of garlic
to taste, fresh, washed basil
tsp of oregano
tiny bit of liquid sweetener, if needed
to taste, salt
to taste, pepper
(dipping crackers, toast bits, bagel toast, sliced squash, celery, carrots or cucumbers)
Method:
Place all of the cream cheese into the food processor with the garlic, rehydrated tomatoes and oil and whip up until fluffy, add the rest of the ingredients (except the dipping crackers, of course) and pulse until well combined. Taste to make sure you like the spice and salt, sweetness and smoke levels. If this is a little too hard to spread, add tiny bits of water, and pulse the food processor until the mixture loosens up. Serve as a spread in a little serving bowl with spreading knife.
