Ingredients...
for Crisps (gluten free seitan)
16oz. of extra firm tofu (drained and most water pressed out)
as needed...rice flour
1/2 cup of light frying oil
to taste...fresh, washed celery stalks
for extra hot Sauce (buffalo hot sauce)
as needed vegan hot sauce of your choice (if you like extra hot, you can just splash the concentrated hot sauce from the bottle on the crisps)
for medium hot Sauce
3/4 cup water
1 TBL potato starch (or corn starch or tapioca starch)
1/4 cup plus 2 TBL vegan hot sauce
1 tsp vegan margarine or vegan butter
for ranch dressing
1 cup vegan mayonnaise
to taste...garlic powder
to taste...onion powder
to taste...black pepper
1 TBL minced parsley or dry parsley
1-2 TBL vegan milk to thin out
Method:
Crisps (gluten free seitan)
place the tofu in food processor and whip up until smooth and creamy. Place the whipped tofu in bowl and add rice flour until the consistency is stiff and will enable you to roll
roll the mixture into very small balls (around 1/2 inch or 2 centimeters) and place on plate until you are ready to fry
heat oil on high in wok or large sauté pan until drops of water pop (watch your arms and face for burning oil spatter). When oil is ready, place the crisps, using tongs, into the oil and fry until light golden brown, using tongs to turn occasionally (usually takes around 10-20 minutes, depending on how many crisps you are making in the same batch)
remove crisps with tongs and place into bowl for mixing. Feel free to blot oil from the crisps with paper towel. Add buffalo sauce and mix with tongs. Plate with sliced celery stalks on the side and a dipping bowl of leftover sauce and dipping bowl of ranch dressing.
Tofu buffalo: these are delicious, and much denser than the light, puffy crisps. I slowly dehydrated the tofu strips for the above picture.
Method for medium hot sauce and ranch dressing
Medium Hot Sauce:
Combine all ingredients with whisk and heat until thick, you may want to add water to thin out if this is too thick for you.
Ranch: EASY
Mix all ingredients, taste and test, some like more garlic, some like more onion. This is all up to you.
